Kale Salad

 
 
  • 1 bunch of kale

  • 1⁄4 cup olive oil

  • 3 tbsp lemon juice

  • 2 tbsp tamari

  • 1/2 cup slivered almonds

  • 1/2 cup grated parmesan

  • salt + pepper to taste

  • 1 tsp maple syrup (optional, to make sweeter)

  1. Wash the kale and remove stems.

  2. Chop leaves into bite-sized pieces.

  3. Add a pinch of salt and squeeze of lemon juice and massage with hands to make kale less tough.

  4. For the dressing, pour olive oil, lemon juice, and tamari into a container with a lid and shake until emulsified. Season with salt and pepper to taste. Add maple syrup to sweeten, (optional)

  5. Toss the kale with the dressing and top with almonds and grated parmesan.
