Mint Dressing

 
 
  • ½ cup extra-virgin olive oil

  • ½ cup lemon juice

  • ¼ cup packed fresh mint

  • 3 tablespoons honey

  • 1 tablespoon Dijon mustard

  • 2 cloves garlic, roughly chopped

  • Salt and Pepper

 

Blend all together and season with salt and pepper to taste. Use on salad or as a veggie dip.
