Pasta with boursin and peas

 
 
  • 1 package of Boursin cheese

  • 1 pound pasta

  • 1 cup of frozen peas (sub with broccoli or spinach)

  • Salt and pepper

  • lemon

  • Herbs




Bring a pot of heavily salted water to a rolling boil. Add your pasta and let it cook until it’s almost al dente (since the pasta will cook a little more later, in the pan with the Boursin). If you’re using frozen peas, throw them in during the last few minutes of the pasta cooking.

Drain the pasta , save 1 cup of pasta water.

Melt the Boursin cheese in pasta pot, stir in pasta, peas and some pasta water to make a creamy sauce.

Add fresh lemon juice and zest. Garnish with fresh herbs.
